Four Course Dinner with Cristom's John D'Anna
& Guest Chef Chris Nason of Sapphire Grill, Savannah, GA
$120* – Lake House 7PM
Relish in an intimate epicurean event, with Cristom Vineyards of Willamette Valley,
Oregon and their distinctive Pinot Noirs. Oregon's wine industry has been built on small
wineries producing wines of impeccable quality. Cristom is at the heart of that philosophy
producing immensely flavorful and pure expressions of the local terrior on the 65 acre estate.
www.cristomwines.com
Paul Gerrie founded Cristom Vineyards in 1991, after attending the International Pinot
Noir Celebration in Oregon. So moved by this experience he relocated his family from the East
Coast to Willamette Valley, Oregon to express his passion for Pinot. Paul works very closely
with winemaker Steve Doerner to let the vineyards do the talking. "The Winemaker's job is to
optimize what nature – the vineyard – provides."
Chef Nason opened Sapphire Grill in January of 1998. Sapphire's "Fresh Market Cuisine" is Chef
Nason's eclectic interpretation of Savannah's antebellum culinary heritage, featuring local and
regional day-gathered, organic ingredients. In June 1996, The New York Times gave Chef Nason a
glowing review for his work in this field. He later expanded the "Fresh Market Cuisine" concept
in its entirety at the Sapphire Grill. "We spend as much time discovering or finding the food
as we do cooking it – in a way, it's like gathering wild flowers."

These original Rhone Rangers came to Paso Robles in 1989 to bring the wines of Chateauneuf
du Pape to the central coast of California. Tablas Creek is the realization of the combined
efforts of these two international wine communities. Since the wineries inception, Rhone varieties
have become an American phenomenon. Help us celebrate 30 years of this joint venture with a
toast and a roast.

Ted Huffman, pit master of Bluffton Bar-B-Q, has been perfecting his BBQ cooking techniques
for the past twenty years. His philosophy is "low and slow" - allowing patience to really be a
virtue. A mixture of hardwoods are a part of the secret recipe and pulled pork and ribs are two
of Ted's specialties. Ted opened Bluffton BBQ almost three years ago and the pork and ribs became
famous. He won best ribs and best pulled pork in the first cook-off he ever entered and decided
to retire a champion - competitively anyway. Bluffton Bar-B-Q will soon occupy space in the new
Bluffton Promenade. Anticipating the new space Huffman says, "We know you love our butts now you
need to come in and check out our racks."
Howard Paul grew up in Atlantic City, N.J, and has been playing guitar since the age of four.
He was drawn to jazz at 10 years old, eventually working both small and big bands, and performing in

His culinary journey began in San Francisco and includes such mentors as Alice Waters, Simca Beck and
Richard Olney. His first restaurant, Highlands Bar & Grill, opened in 1982. Here, Frank combines consummate
French technique and the seasonal flavors of both "south's" – of course the local south, but the south of
France as well. At Highlands, humble southern ingredients such as stone ground grits and country ham meet
French sauces and braises, creating superb flavors and elegant balance.
